Quick answer
5 days is the sweet spot for Jeju, and 3 days is the minimum to see the main sights. Three days covers the east (Seongsan and the lava tubes), the south coast around Seogwipo and one beach. Five days gives Hallasan a day of its own, adds Udo and the west coast, and leaves time to walk a couple of Olle routes. With a car you can cross the island in about an hour and a half.
